Born into a family that owned a teppanyaki restaurant, he grew up alongside the establishment. After working at a broadcasting station, he discovered his passion for culinary creativity and embarked on a culinary career at the age of 25. With 33 years of experience in the culinary field, he has combined his knowledge of teppanyaki with French cuisine, pastries, and sommelier skills, specializing in dishes using Shizuoka tea and tea pairings. While studying in France, he encountered "KAWANE" at a tea shop and realized that his roots lie in Shizuoka. Since then, he has continued to work closely with producers, creating dishes that express the region's climate and food culture on the plate.
